Scale
Main Protein:
- 1 pound ground beef or turkey
Cheese Ingredients:
- 1 cup cheddar cheese (shredded)
- 1 cup monterey jack cheese (shredded)
Vegetable and Seasoning Ingredients:
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 packet taco seasoning
- 1 can (15 ounces) black beans (drained and rinsed)
- 1 can (15 ounces) corn (drained)
- 1 can (4 ounces) diced green chilies
- 2 flour or corn tortillas
- 1 cup salsa
Optional Garnish and Serving:
- 1/2 cup sour cream
- 2 green onions
- 1/4 cup cilantro
Instructions
- Warm the oven to 375F (190C) and lightly coat a 9×13 baking dish with cooking spray or butter.
- In a large skillet over medium heat, thoroughly cook ground beef with diced onions and minced garlic until meat is completely browned and onions are translucent. Carefully drain accumulated fat.
- Incorporate taco seasoning, salsa, black beans, corn kernels, and chopped green chilies into the meat mixture. Allow the ingredients to simmer for 5 minutes, enabling flavors to meld together.
- Create the first foundational layer in the prepared baking dish by evenly spreading the seasoned beef mixture across the bottom.
- Arrange a complete layer of tortillas directly over the beef, ensuring minimal gaps between them.
- Generously sprinkle a combination of shredded cheddar and Monterey Jack cheeses over the tortilla layer.
- Repeat the layering process – beef mixture, tortillas, and cheese – until all ingredients are utilized, making sure the final top layer is covered with cheese.
- Shield the casserole with aluminum foil and bake for 20 minutes in the preheated oven.
- Remove foil and continue baking for an additional 10 minutes until cheese becomes golden and bubbling.
- Remove from oven and let the casserole rest for 5 minutes to help layers set. Optional: Garnish with dollops of sour cream, chopped green onions, and fresh cilantro before serving.
Notes
- Swap ground beef with plant-based crumbles for a vegetarian version that keeps all the zesty flavor and protein.
- Reduce sodium by using low-sodium taco seasoning and selecting a mild salsa to control salt levels without compromising taste.
- Make this dish gluten-free by choosing corn tortillas instead of flour tortillas and ensuring all packaged ingredients are certified gluten-free.
- Add extra nutrition by incorporating diced bell peppers or spinach into the beef mixture for increased vegetable content and vibrant color.
